    1. 12 inch Pizza pans star rating

Posted by John Stott on Dec 5th 2017

I bought these pans along with other Lloyds pans and they are great. I been using Lloyds pans to make pizza at home for sometime. Always a great product and great results. It's all about the crust and these pans deliver. We use them on a baking steel at about 500 degrees and get nice round pizzas that slide off the pans with a crispy crust.

    2. Makes wonderful thin, crisp crusts (with cornmeal on bottom) star rating

Bought two of these 12 inch perforated pizza pans, and they make a major difference in the quality of my pizza crust! First, as the instructions directed, I washed the pans and wiped the interiors with a SMALL amount of oil. I made sourdough crusts with my own recipe, and patted each piece of dough on a cutting board spread with some uncooked (dry) polenta, then transferred each circle to its new pan. Carefully pulled the dough larger, to fit the pan and make a rim of dough. Let them rise for awhile, then put them in the oven during the first 3 or 4 minutes of pre-heating, taking them out when they had risen about halfway to what I expected. When the oven reached 450 degrees F, I put the pans in for 5 or more minutes (till fully risen), then took them out and put on the toppings (tomato/basil sauce, lots of cheese and marinated artichoke hearts) and baked the pizzas till the cheese was slightly browned and the crust-edges were somewhat browned (bottom was quite dark where some bits of dough had expanded through the perforations of the pans). Shifted the pizzas to cooling racks for a few minutes, then cut them up on the cutting board. RESULT: Beautifully crisp crust, though quite thin (less than an eighth of an inch except on edges). CLEAN-UP: Not really any clean-up, just wiped off a few bits of polenta.
